I saw an order get placed today that I forgot about, so tried to cancel it in my Profile. Will that cancel my order that's already been placed?

No, cancelling/editing your subscription after your order has been placed will not affect the placed order.  But we always send an automatic reminder email three days before your order date to give you a chance to make any changes you'd like, including delaying/cancelling/editing your subscription. 👍
